We’ve been eating a lot of kale chips recently — chock full of vitamins A, K, and C, it’s also a good low-fat low-cal source of iron and fiber.To make it taste a little better (and by “a little” we mean “a lot” and by “a lot better” we mean “awesome”) try this:
- Tear into individual leaves and cut out thick stem parts. Wash and dry.
- Spread out on a cookie tray — don’t layer!
- Spray with olive oil and apple cider vinegar, lightly, but being sure to get each leaf.
- Salt. We use freshly ground sea salt, but I’m sure table salt will work just as well!
- Bake at about 350 until leaves are dry and crisp (but not burned!) It will probably take about 10-15 minutes.
